CLASSIC GRILLED SALMON WITH LEMON, DRIED DILL AND ST. FRANCIS CHARDONNAY
Pair with St. Francis Sonoma County Chardonnay
About 2 pounds salmon fillet
3 tablespoons extra virgin olive oil
2 tablespoons dried dill
¼ cup St. Francis Chardonnay
1 small lemon thinly sliced into rounds
Salt and freshly ground black pepper, to taste
Rub the salmon fillet with the oil, sprinkle generously with salt and pepper and distribute the dried dill evenly on top of the flesh side of the salmon. Place the fillet in large rectangle of heavy-duty aluminum foil with at least several inches extra on every side. Lift up the sides around the fish but do no close fully. Pour the wine over the fish and top with the lemon slices. Grill on medium heat, with the grill partially covered, for about 20 minutes until cooked through.
