If you are looking for a healthy holiday breakfast to feed your holiday guests then consider al fresco all natural as a healthy option for the holidays.

Breakfast is often an overlooked meal during the holiday season, but al fresco all natural has some delicious and nutritious recipes to have in your back pocket when the holidays are getting the best of you! Check out this tasty egg and sausage recipe below:

Baked Egg Cups

Serves: 6 Prep Time: 12 minutes Cook Time: 18 minutes

  • 1 (8 oz) package al fresco® Country Style Breakfast Chicken Sausage, sliced into ½" pieces
  • 3 pieces Phyllo Dough 13" x 18", cut into 6" squares
  • ½ cup scallions, tops & bulb, fresh, chopped
  • 4 oz spinach, chopped, defrosted and squeezed dry
  • 6 large eggs
  • 1/3 cup cheddar cheese, low sodium, shredded
  • Cooking Spray, butter flavor

  1. Preheat oven to 350 degrees F
  2. Spray 6 custard cups or a standard muffin pan (6 oz capacity) with cooking spray.
  3. Line each cup with 3 layers of phyllo dough and spray with the butter cooking spray between each layer.
  4. In a small bowl mix the chicken sausage, scallions and spinach. Divide the mixture between cups.
  5. Break 1 egg into each cup, sprinkle with pepper and top each with about 1 tablespoon of the cheese.
  6. Bake in the oven for 18 minutes or until the yolks are set.
  7. Serve either in custard cups or gently remove from muffin pan (let the egg cups cool 3 minutes before trying to remove).

If you’re going for a simpler breakfast try pairing your favorite eggs and toast with al fresco’s frozen fully cooked breakfast sausages like Apple Maple and Country Style with sage and thyme. These sausages are prepared in minutes and provide the perfect fuel for the rest of the day. My  family, especially the children absolutely LOVE these breakfast sausages with scrambled eggs, omelets pancakes and so much more! They would be the perfect addition to any holiday breakfast and your guests are sure to ask for more!
