We have been enjoying the different varieties of new organic dressings in variou dishes! My children LOVE the Ranch on their salads, we use the Balsamic in our pasta salads and the Caesar is delicious in wraps!
Salad is a daily staple for many, but everyone is always looking for a fresh, new way to change up the standard recipe. Newman’s Own Kale and Wild Rice Salad, featuring the new Organic Balsamic Vinaigrette, is quick and easy-to-make using fresh, healthy and filling ingredients. Check out the recipe below!
Newman’s Own Kale and Wild Rice Recipe:
o 4 leaves kale, chopped into 1 inch pieces, very bottom stalks removed
o 5 skinny Asian eggplants, chopped into 1 inch pieces
o 1 Tbsp olive oil
o 1 tsp coarse sea salt
o 1/2 cup wild rice, cooked
o 1/3 cup pinto beans
o 3 sprigs cilantro
o 2 Roma tomatoes, chopped
o 2 Tbsp Newman’s Own Organic Balsamic Vinaigrette Salad Dressing
o Preheat oven to 375 degrees. Toss the kale and eggplant in olive oil, arrange on a large cookie sheet and spread out. Sprinkle with sea salt and put in the oven.
o After about 10 minutes (watch to make sure it doesn't burn), transfer the kale pieces to a bowl and flip eggplant slices over. Return the eggplant to the oven to cook a few minutes more. Eggplant is finished when it is browned and tender.
o To assemble, combine kale, eggplant, rice, beans, cilantro, tomatoes, and dressing. Toss and serve.
